This khatta meetha achar is a traditional UP preserve called khatmithhi, gudamma (gud is jaggery n the name suggests gud + aam) and paagey aam (meaning mangoes in sugar syrup). - Heat a pan, add all dry masale and dry roast the masala. Coil it and griend it.
- Now heat oil in pan add hing and mustard seeds and turmeric powder, when seeds crackle add raw mango slice and cook on low flame, Stirr regularly.
- Now take another pan add sugar and 1 cup water and maje sugar syrup.
- When mango cooked or soft add sugar syrup, all dry masala powder and all regular masale and mix well.
- Cook till then the mixture thick and mix with masala.
- Then switch off gass.
- Achar is ready serve with roti ice, bread or paratha.
Add sugar and salt and mix well in a large bowl. Roast cumin seeds, cardamom seeds and poppy seeds, stir in chili powder and mix with the sweetened mango.
