Cake: Position a rack in the center of the oven. Sift the flour, baking powder and salt into a large bowl. For the upside down version, fresh mango slices are used instead of mango puree. Follow my homemade pineapple upside down cake recipe and replace pineapples with fresh mangoes.

Steps to make Mango Cake:
  1. In a bowl take mango puree and powdered sugar and mix well till sugar is completely mixed.
  2. Add oil to mango puree and mix well.
  3. Add maida little at a time to mango puree and then add milk little at a time and make a smooth batter.
  4. Grease a bowl and dust it with flour and remove the excess flour.
  5. Put sand at the bottom and Preheat the cooker.
  6. Add salt, baking powder and baking soda and mix lightly in one direction only and immediately pour the batter in the greased pan.Add chopped almonds, chopped pistachios and pumpkin seeds and tap the bowl twice.
  7. Keep the bowl on a ring in a pressure cooker and keep on high flame for 5 mins and then reduce the flame. Remove the whistle and rubber ring kf pressure cook and then cover it.Cook for 35-45 mins. Check with a toothpick or knife. If it comes out nicely means it's done.
  8. Keep sand at the bottom of the cooker. Then keep a stand and on that keep the bowl if batter and it should not be filled fully.
