- Take milk powder in a bowl and add milk, stir it with the help of a whisk to combine and set aside.
- Soak 1pinch of saffron in two spoons of hot milk and mix them until they dissolve and keep the mixture aside.
- Grind mamgo pulp in a blender and make mango Puree.
- Grind khoya in a blender for a few seconds to make the granules fine.
- Heat a non stick pan on the medium flame and add 1tsp butter and heat it.
- Now Add the puree in the pan and cook mango puree for 5 - 7 minutes.
- Now add khoya and mix well with the mango puree and add sugar powder mix it well.
- Now stir the mixture and cook for 5 minutes on a medium to low flame.
- Now add the milk powder mixture and saffron milk stir it and mix well.
- Now cook the mixture on low flame continuously stirring until it becomes thick consistency and add cardamom Powder and mix well it.
- Greas the ghee/oil on the surface of tray.
- Now off the flame and Pour the mixture on the tray and flatten it. Grease the spoon with ghee and flatten the mixture using this spoon so that it doesn't stick to the spoon.
- After it cools completely till set and garnish the top with pistachios. Cut the barfi into desired shape.
