  2. Take 100 grams tofu, grated
  3. Take 2 medium onion, finely chopped
  4. Take 5 each green chillies, finely chopped

  6. Get 1/2 tsp dry mango powder

  8. Get 1/2 tbsp oil

  10. Prepare 4 cup wheat flour

Visually appealing and amazingly tasty, these Parathas look very good thanks to the green hue imparted by the spinach purée. There are different varieties and brands of tofu available, both Indian and international. Indian tofu is softer in texture and less expensive than the international ones. You could use whichever is easily available, that will not change the 'effect' of the dish!

Instructions to make Tofu Cheese Paratha:
  1. Mix the flour, salt and oil. And keep adding little water in it unless u get a well firmed dough.
  2. Heat the oil in a wok
  3. Add cumin seeds, green chillies nd onions
  4. After its cooked, add little salt and dry mango powder
  5. Add grated tofu and mix well. Cook on medium flame while stirring for 3-4 mins.
  6. Keep the stuffing aside.
  7. Take a handful dough. Make a ball and than flatten it with rolling pin…Make sure that the sides are thin nd centre is bit thick.(use flour to avoid stickiness)
  8. Put some stuffing in the centre and add cheese. Now take the circumference of the rolled dough nd cover the stuffing like a pouch.
  9. Slowly press it while rotating nd flatten a little using hands. Then again use the rolling pin to flatten it with little pressure.
  10. Make sure the stuffings doesn't pours out. And roll it until it's 1-1.5 cm thick and round in shape. Make sure u spread the stuffings evenly.
  11. Heat the flat plan on stove. Nd put the paratha on the pan to cook on medium flame. Keep for 3 mins.
  12. Flip it and let the other side be cooked. Now apply ghee on top and flip it again.. apply ghee and both sides.
  13. Bake until both sides are little brownish.
  14. Serve with curd or pickle.

This paratha is a slight variation from the cheese paratha I used to pack for my kids' lunch box decades ago! Their favorite was just some grated cheese (maybe some Amul cheese or grated paneer) with some finely chopped onions, cilantro and their favorite spice powders like MDH Kitchen King or Pav bhaji masala powder!. Rolled up and dipped in tomato ketchup and their lunch break in school. Divide the dough into four equal.
