Instructions to make Mango Bars:
  1. Preheat oven to 350° F.
  2. In large bowl , mix the 1 1/2 cups flour, 1/4 Tsp salt and 1/4 cup sugar together. Add in the 1/2 cup Butter pieces and cut in or mix with fingers until mixture resembles sand. Press firmly into lightly greased 13x9 pan going slightly up sides. Make sure there are no holes or cracks.
  3. Bake in 350° oven for 17 minutes.
  4. While crust is baking.
  5. In large bowl (just wipe out bowl used to mix crust), mix the 1 1/4 cups sugar together with the 3 tbls flour and whisk. Beat in the 4 large eggs until well combined. Next, add in the 1 1/4 cup mango puree and the 1/3 cup Lemon juice. Whisk well until smooth.
  6. Pour mango mixture over HOT crust.
  7. Return to oven and bake for 22-24 minutes.
  8. Cool completely. Garnish with powdered sugar sifted over top if desired. Cut with damp knife for clean cut presentation.
  9. Keep leftovers in airtight container in fridge.
