Mango Rasmalai is made by giving a twist to the traditional rasmalai. It uses mango puree to the rabri/ sweetened evaporated milk to give a mango flavor to the rasmalai. If you are using the Ricotta cheese, mix together the confectioner's sugar and cheese. Then, continue boiling at a low flame.
Steps to make Mango Bread Rasmalai:
- Take out the pulp of fresh ripened mango, blend it in a blender and make a smooth puree.
- Cut bread slices into any shape of your choice (using a cookie cutter, glass, katori etc) removing it's brown edges.
- Take milk in a thick base pan, add sugar, cardamom powder and let it come to boil at medium flame. When it comes to boil reduce the flame and keep stirring for good 20-25 mins. Don’t let the milk get stick to the pan.
- After you get the desired consistency, add rose water and mix just before switching off the flame.
- Remove pan from flame, add condensed milk, mango puree and give it a good mix.
- Arrange bread slices in a serving bowl and pour the prepared thick milk on it. Let it cool for 15 mins in fridge.
- Garnish it will edible rose petals, dry fruits or diced mango cubes according to your preference and serve.
